Pizza Muffins:
- INGREDIENTS:
1 1/4 cups all-purpose flour,
1 tsp baking powder,
1 tsp dried oregano,
8 tbsp butter (melted),
1 cup milk,
2 eggs,
2 tbsp pizza sauce, plus some extra for dipping,
4 oz mixed cheddar and mozzarella cheese
(grated),
5 1/2 oz mini pepperoni (sliced)
- Preheat the oven to 375°F and grease a muffin
pan with oil.
- Mix the flour, baking powder and oregano in a
bowl, and the butter, milk eggs and pizza sauce in
a liquid measuring cup.
- Pour the egg mixture into the flour mixture (not
vice versa) and lightly stir together. Then, fold in the cheese and pepperoni.
- Spoon the mixture into the muffin pan (only fill
the cups 3/4 of the way or the mix will spill out)
and bake for 20-25 minutes until golden.
- Wait until they cool, dip in pizza sauce and
enjoy!
